1 cup gluten-free flour mix
3/4 cup almond flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp ground cardamon
1/2 tsp sea salt
1/3 cup maple syrup
2 pasture eggs
1/4 cup softened coconut oil
1/2 cup shredded coconut
1 cup grated carrots (firmly packed)
1 cup grated apples (firmly packed)

1.Preheat oven to 350F.
2.In a large bowl, mix gluten-free flour, almond flour, baking powder, cinnamon,cardamon and sea salt.
3.In another bowl wis together eggs, maple, coconut oil.
4.Pour wet into dry ingredients and mix well.
5.Add shredded coconut, grated carrots and grated apples, folks gently until combined.
6.Divide the batter in muffin cups. Bake for 30 minutes, until muffins are golden brown and toothpick comes out clean.
7.Let them cool on wire rack. Enjoy!
