Dry ingredients:
1 cup millet flour
1 cup brown rice flour
1/4 cup tapioca flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt

Wet ingredients:
1 cup almond milk
1 Tbsp apple cider vinegar
2 pasture eggs little bitten
1/4 cup softened coconut oil
1/3 cup raw honey
1 tsp vanilla extract

1.Preheat oven to 350F
2.Combine all the dry ingredients in a large mixing bowl.
3.Add the apple cider vinegar to the almond milk and let it sit for 10 minutes.
4.In another bowl, combine the wet ingredients and whisk. Add the almond milk.
5.Add the wet ingredients to dry ingredients. Stir to incorporate evenly.
6.Distribute batter evenly between 12 muffin cups, so they are 3/4 full.
7.Bake at 350F for 20 minutes, the muffins should be golden brown and a toothpick inserted into the center should come out clean.
8. Let them cool on a wire rack and enjoy with some strawberry jam or honey on top.
